There’s nothing status quo about Rachel McGill, entrepreneur and owner of DISH Restaurant in Lincoln, Nebraska. Her philosophy is about pushing the envelope – it’s being creative, unique, and inspirational with the way she wants people to experience food and genuine hospitality of the amazing, varied, and diverse team DISH.

Food has always been Rachel’s passion and creative outlet. At DISH, she is able to share her vision with her team as well as with patrons. Her unique dishes are beautifully designed and present as works of art on each plate, wowing guests. Featuring an upscale American cuisine, she is committed to using locally-sourced ingredients that offer an ever-changing seasonal menu, every day. Rachel’s talents as a chef have been recognized by the James Beard Foundation, naming her a semifinalist for Best Chef, Midwest in 2022.

Giving back to the Lincoln community is also very important to Rachel. Every day, she sees how food and hospitality can bring together the community, how giving back helps those less fortunate, and how the community shows up to support these efforts. This empowers Rachel to do more by sharing her culinary vision with the world.

As a restaurant owner, Rachel is a leader of change. She instills a culture of respect and collaboration, growth and learning, and mental health awareness. She has been humbled and inspired by her team as they embrace DISH’s supportive and forward-thinking environment, solving problems together and impacting the future of food service.
